Day 87: “The Great Big Burger Book”

I love chicken satay and was intrigued to try it in a burger form. I have made chicken satay at home and my kids love it as it is food on a stick. I think there is a rule that kids have to love food on a stick. Maybe I should try brocoli on a stick or banana on a stick. Oh wait, they do that banana one already plus they coat it in chocolate and freeze it. So if it comes on a stick, it has to taste good as a burger? Plus I am usually grilling by this time of year outside. The calender tells me it is Spring, but the look outside my window tells me otherwise. So what is a girl to do but fire up the George Foreman grill for another round of indoor grilling. We did take the grill out of storage last week and of course my husband and son had to climb over snow drifts to do it. But just seeing the grill on my deck gives me hope that winter will end.
This cookbook is filled with 100 burger recipes with any type of meat….chicken, duck, bluefish, salmon and non-meat…..chickpea, eggplant, brussels sprouts (I kid you not). If the most exciting thing about your burger is offering different types of topping, this cookbook will be a fun adventure for you! I want to try Chicken Marsala burgers next!
The Ruling: We liked them. Youngest child didn’t eat them (remember he has a thing about ground up animals). But fussy middle child ate one! I had mine without the bun and topped it with the spicy cucumber salad and it was delicious and full of flavor! This get a little messy while making them, so if you have plastic kitchen gloves, pull them out for this burger. This recipe will make a return visit when the grill is dusted off with snow!
Chicken Satay Burgers, page 112
- 2 tablespoons chunky or smooth peanut butter
- 2 teaspoons sugar
- 2 teaspoons Tabasco sauce
- 1/4 cup chicken broth
- 1 pound ground chicken
- 1 tablespoon minced garlic
- 1/2 cup chopped fresh cilantro leaves
- 1/4 cup chopped fresh mint leaves
- 1/2 teaspoon salt
- Mix the peanut butter, sugar, Tabasco, and chicken broth together in a small bowl until well blended. Set aside.
- In a large mixing bowl, mix together the ground chicken, garlic, cilantro, mint, and salt, using your hands. Add the peanut butter mixture and mix until combined. Form into 4 patties, each 1 inch thick.
- Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, at least medium, about 4 minutes per side.
Spicy Cucumber Salad
- 1/3 cup seasoned rice vinegar
- 1 tablespoon sugar
- 1 large cucumber, peeled, seeded, and cut into 1/4-inch dice
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon salt.
- In a medium-size bowl, stir together the vinegar and sugar until the sugar dissolves. Add the cucumber, pepper flakes, and salt and stir to coat.
- Let sit for at least 30 minutes before serving. Serve at room temperature.
