My kids love to be in the kitchen, ok maybe one of them does. They like it more if I make it and serve it to them and clean up the kitchen and the dishes. But hey, we live in a real family and the kids need to step in and help. One kid cleans up from dinner, one kid unloads the dishwasher and one kid feeds the dog. My rule is that if I cook, I don’t have to clean the kitchen. I don’t like to clean, so therefore I do the cooking most of the time. If someone else does the cooking I am thrilled! I try to do everything I can to encourage my kids to be in the kitchen cooking with me or for themselves. Ever since they were little and I bought them the safety knives to help me cut. My oldest son will cook a couple of times a week or whenever I need help. The other two kids help only when they want to make something like cookies. My youngest still is a little hesitant on pulling things out of the oven. He will get over that as he makes frozen pizzas for himself!
Having cookbooks that kids can find something to make let alone eat is a great thing! Having kids that will eat vegetables is another thing entirely. This cookbook is full of beautiful photos and great recipes, but I don’t think my fussy two would eat most of them. I however love them and would love to make everything. I think the Spinach salad with dried cherries, almonds, and blue cheese sounds delish!

- 2 tablespoons mayonnaise
- 1/2 teaspoon Dijon mustard
- 8 slices white bread
- 4 thin slices ham
- 8 slices Gruyère cheese (6 to 8 ounces)
- 2 tablespoons unsalted butter, melted
- In a small bowls, stir together 1 tablespoon of the mayonnaise and the mustard. Spread evenly over 4 slices of the bread. Arrange a slice of ham and a slice of Gruyère on each piece of bread.
- Put the remaining 4 slices of bread on top of the sandwiches. Brush the outside of both slices of bread with the melted butter.
- Preheat an indoor grill or heat a nonstick grill pan over medium-high heat.
- Grill for 2 to 3 minutes on each side or until the bread is lightly browned on both sides and there are nice-looking grill marks on the bread. Using a large spatula, transfer the sandwiches to a broiling tray or cookie sheet.
- Preheat the broiler .
- Spread the top of the sandwiches with the remaining tablespoon mayonnaise and top with the 4 remaining slices Gruyère, being sure to cover the crusts of the bread.
- Broil, cheese side up, for 1 to 2 minutes, or until bubbly and golden brown. Serve hot.
