Week in Review: February 5, 2011

Did you miss any of my posts from the last week?  Never fear, as I will give you quick links to them and you too can make some fun family meals this week.  My top three would be the Death by Chocolate (for special occasions), cheese buttons (because they remind me of my childhood) and Bean dip (because it is creamy and easy to make).  Asking my kids they would add the french toast into the best of the week.  Enjoy the weekend and time with your loved ones!

Day 34…..Slow Cooker: The Best Cookbook Ever

Poached pears are one of those desserts that makes you feel like a grownup.  Be it poached in red wine, or in this case Amaretto they always are a classy dessert.  This cookbook calls itself  “the best cookbook ever”, but does it live up to its name?  I actually was pleasantly surprised by the range of dishes in this cookbook.  How about Chioppino made in a slow cooker?  Or how about braised lamb with tomatoes, eggplant and feta?  But despite the vast array of choices (over 400), I decided on the poached pears.

If I was to repeat this recipe I would peel the pears….oops, didn’t read the instructions on that one.  I would also halve them and have them sit cut side down in the liquid.  The instructions don’t call for that, but I think it would help in the absorption of all that amaretto goodness.  The recipe calls for amaretti cookies, but I could not find them.  I found another almond cookie and used that one instead, it was okay but not as good as an amaretti cookies would have been.

The pears were eaten quickly…..I think the oldest son was the only one that ate one.  We had company and they were gobbled up before the other two had a chance to eat one.  Their loss, but our gain!  On the page next to this recipe is for red wine poached pears with stilton…..now doesn’t that sound good?  If only I was married to a stilton loving kind of man, but alas he likes his cheese without mold!

Amaretto Poached Pears, page 426

Ingredients:

  • 1/2 cup amaretto liqueur
  • 1 cup pear nectar
  • 1 1/2 cups packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 6 firm red pears, peeled and cored
  • 1/2 cup crushed amaretti cookies, about 6
  • 1/2 cup chopped almonds, toasted

Directions:

  1. Combine the amaretto, nectar, sugar, and butter in the insert of a 5 to 7 quart slow cooker and stir until the sugar is dissolved.  Stand the pears in the liquid, stem-ends up.  Cover and cook on low for 4 hours until the pears are tender.
  2. Combine the cookie crumbs and almonds in a small bowl and set aside.  Uncover the pears and allow to cool.
  3. Serve each pear in a pool of the sauce sprinkled with some of the almond mixture.
  4. Serves 6-8.
